Fall 2009 Lamb Sausage Specials


These delicious sausages are created by Pioneer Meats, a state-inspected processor located in Big Timber.  Brian is working with us to perfect a more natural sausage product by using local, natural pork when needed, avoiding MSG where possible, and in future smoked recipes seeking natural alternatives to nitrates.  Some pre-formulated recipes will contain MSG and its use is unavoidable.  Always remember that the MAIN INGREDIENT is our naturally-raised, grassfed Icelandic lamb, famous for its lean, delicate flavor.   You will LOVE these savory sausage varieties that have converted even the most critical lamb skeptic!

Basic 1 lb. Sausage Package Price = $7.50
All sausages are in link form.  4 or 5 links per pack.  Removed casings from fresh sausage varieties if you need loose, or minced lamb in your favorite dish.

The Fresh Players:
Sweet Italian - mildly spiced, perfect for sensitive tastebuds
Hot Italian - Spaghetti, Lasagna Kick It Up a Notch!
Breakfast Malaboza/Sage* “  - mini-links of old-fashioned goodness!
Linguisa* - a stand alone meal, spiced to perfection

The Smoked Players:
Bratwurst - traditional smoked flavor, got cooked cabbage?
Bratwurst w/ Cheese - add to mac and cheese for the cheesiest kid’s meal
Jalapeno and Cheese - Not a kid anymore!
Hawaiian Cheese Bratwurst - the ULTIMATE Wolf Ridge Favorite!  Stand-alone or top a pizza!  A Spicey Sweet pineapple blend, step outside the box!!

Need a recommendation? 

-The Fresh Italians, either Hot or Sweet, if its your first time.
-Hawaiian, hands down, the BEST if you have finicky eaters!!
-Linguisa cooked in minced form or sliced and added to your favorite corn chowder, MMMMM…GOOD!
-Brat in a Blanket!  Pastry-wrapped slices perfect for parties!
-Mozzarella stuffed Meatballs:  remove casings from fresh Linguisa, form    sausage balls around a cube of cheese, bake in the oven for a quick and     easy appetizer!
